Fast - N - Easy Wheat Bread


4 1/2 Cups wheat flour
1 1/4 Cups white flour
1 1/2 Tbs yeast
1/2 Cup brown sugar
2 1/2 Cups water (lukewarm)
1/4 Cup olive oil
1/4 Cup gluten
1/2 tsp salt

Mix the 1 1/4 cup white flour, yeast, sugar and water. Let sit for 5 min. until bubbly.

Add...oil, gluten, salt, and remaining wheat flour until a soft dough forms and pulls away from sides of bowl.

Divide into 2 loaves. Let rest 15 minutes.
Bake at 350 for 20-25 minutes.

Tips: I think the less you mix and handle this bread, the better. It should be a wet dough, just barely pulling away from sides of bowl. You will need a lot of flour on hands when forming loaves.

For a grainier, healthier, yummy bread, I have been adding a cup of 9 grain cereal, and a cup of 6 grain oatmeal (finely chopped) in place of the wheat flour. You can really play with the flour. I have added as little as 3/4 cup of white, and mixed and matched the wheat flour and grains. Just add a combination of what you like to add up to the total flour.

Freezes great.
